My Yeasty Sandwich Bread is easy to make and perfect for any sandwich, as the base for bruschetta, and for homemade croutons.

Ingredients
- 3 cups (681 ml) warm water
- 1 T ( 13 grams) sugar
- 1 T (21 grams) honey
- 2 t (10 grams ) kosher salt
- 1 package active dry yeast
- 3 T (39 g) olive oil + 1 additional T, divided
- 8 cups (960 grams) bread flour (you can substitute King Arthur gluten free bread flour)
- 6 Tablespoons (36 grams) dried milk powder ( I use non-fat)
- 1 egg lightly beaten, room temperature
- additional bread flour as needed if dough wants to stick
- 2 Tablespoons melted butter
Instructions
- Add sugar and honey to warm water.
- Add in yeast and whisk.
- Add in olive oil.
- Whisk flour and milk powder together.
- Next, add one cup flour mixture to mixing bowl and pour in yeast/olive oil mixture into bowl with mixer running.
- Continue adding one cup of flour at a time.
- Once all flour has been fully incorporated, add the salt and lightly beaten egg.
- Continue mixing until dough begins to pull away from the sides of the mixer. This usually takes 5-8 minutes. If dough continues to stick, add 1/4 cup of bread flour and continue mixing. Continue to add 1/4 cups as necessary until dough starts to pull away from bowl.
- Once dough has formed a ball, remove bowl from mixing stand.
- Pour a small amount (approximately 1 Tablespoon) of olive oil on the dough ball and spin it around to cover the ball completely.
- Cover and allow to rise until double in size – usually one hour.
- Punch dough down and divide evenly between two parchment paper greased loaf pans.
- Cover and let rise in a warm spot until double in size.
- Preheat oven to 375 degrees Fahrenheit.
- Place loaves in oven and bake for appoximately 35-37 minutes until golden brown.
- Remove the loaves from the oven.
- Pour melted butter over the top of the loaves and allow to cool.
Notes
- If you use gluten free bread flour, the baking time will increase to an additional 10 minutes to 40-45 minutes.
- This bread freezes beautifully.
- After mixing up the dough, I have covered it and placed it in the refrigerator overnight to rise. Then, I allow it to come to room temperature on the counter before dividing between two loaf pans and doing a final rise before baking per instructions. The overnight stay in the refrigerator gives the bread a higher rise.
