My World Famous Mashed Potatoes are, in fact, not famous…..YET.

Only those close to me have gotten to enjoy these dreamy potatoes.

I start with two very large russet potatoes – nearly a pound each.

This will give you four servings.

If you want to increase the amount of potatoes you are making, you will then double, triple, or quadruple the ingredients you are using based on the number of potatoes you use.

Four potatoes – double in the ingredients.

6 potatoes – triple the ingredients.

8 potatoes – quadruple the ingredients.

World Famous Mashed Potatoes in a rooster bowl - J Dub By Design™

Ingredients

Scale
  • large pot of water to generously cover potatoes
  • 2 Tablespoons Knorr Chicken Bouillion
  • 2 Tablespoons Kosher salt
  • 2 large potatoes (those weighing close to one pound)
  • 1/4 cup cream
  • 4 ounces softened cream cheese
  • 4 Tablespoons softened butter
  • 1 Tablespoon garlic oil (from garlic confit)
  • up to 3 additional teaspoons kosher salt (do not add all of this at one time, its going to depend on how salty you had your water when you were boiling the potatoes)
  • 2 teaspoons course ground black pepper

Instructions

  1. Add chicken bouillon and salt to water.
  2. Bring to boil.
  3. While water is boiling, roughly peel two potatoes.  I leave some skin on.
  4. Cut potatoes into large chunks and gently place in boiling water.
  5. Boil the potatoes until fork tender.
  6. Once potatoes are fork tender, remove the pot from heat and drain potatoes.  Do not pour the juice down the drain.  Save this broth to cook pasta or use for soup bases.
  7. Place the potatoes back in the same pot and return to stove, but leave the burner OFF.
  8. This will allow any dampness on potatoes to dry out.
  9. Add softened cream cheese and softened butter.
  10. Stir to combine.  This will also allow the potatoes to start to crumble.
  11. Next, add the garlic olive oil and mix again.
  12. Add cream and mix again.
  13. Taste and then add salt sparingly while tasting to make sure you do not oversell.  I usually use 2 of the 3 teaspoons.
  14. Finally add the course ground pepper and give it another mix.
  15. Serve immediately.
