Meet The Leftover Legend Sandwich.

Someone once testified – in a legal deposition, under oath – that I could not make a sandwich.

I decided to take that personally.

Behold: leftover T-bone steak on homemade focaccia, basil mayo, melted smoked gouda, fresh tomato, and a cilantro-lime dressing worth writing home about.

Sworn testimony says this is impossible. The sandwich says otherwise.

Instructions

  1. Preheat oven to broil.
  2. Sprinkle tomatoes with kosher salt and set aside.
  3. Slice the leftover T-bone thin, against the grain.
  4. Heat a skillet over medium high heat with a drizzle of olive oil.
  5. Add steak and sear 30-60 seconds – you are warming it, not cooking it.
  6. Remove from heat immediately.
  7. Spread basil mayo generously on both sides of focaccia.
  8. Layer steak on one slice of focaccia.
  9. Tope the steak with 3 slices smoked gouda.
  10. Using a spatula, slide the break with the steak and cheese onto a pan and broil just until cheese begins to melt.
  11. Remove from oven and add the fresh tomato.
  12. Top the tomato with a heft drizzle of cilantro lime dressing.
  13. Top with remaining slice of focaccia.
  14. Slice and enjoy.

Notes

  1. I used leftover T-bone, but ribeye, skirt, strip all work.
