Description

These spinach artichoke twice baked potatoes will be a hit at the dinner table this week.

Instructions

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Rub olive oil over both potatoes.
  3. Sprinkle with kosher salt.
  4. Bake in the oven in a cast iron skillet until fork tender, about 40 minutes.
  5. Remove from oven and allow to cool until you are able to pick them up safely.
  6. Cut the potatoes in half vertically.
  7. Scoop out the potato pulp and place in a bowl, do not discard the potato shells.
  8. Add melted butter and spinach artichoke dip to the potato pulp.
  9. Mix thoroughly.
  10. Scoop the mixture back into the potato shells.
  11. Bake the potatoes in the same cast iron skillet or a greased casserole dish for 20 minutes until hot and bubbly.
