Small Vines Creamy Shrimp with Pasta


Description

The perfect summer pasta dish that pairs so well with Small Vines Chardonnay.


Ingredients

  • 1 pound raw shrimp, peeled and deveined
  • 4 Tablespoons butter
  • 3 cloves garlic, minced
  • 4 cups fresh spinach
  • 1/2 cup sun dried tomatoes, not in oil (see notes)
  • 14 ounce can artichokes, drained and roughly chopped
  • cooked pasta, I used thin spaghetti
  • 1/2 cup white wine
  • 1 cup heavy cream
  • 1/2 cup pasta water
  • salt and pepper to taste

Instructions

  1. Melt butter in skillet.
  2. Sauté shrimp in melted butter, aproximately 2 minutes on each side.
  3. Remove shrimp and set to the side.  You can keep them warm in the oven by heating the oven to its lowest temp and then turning it off before putting shrimp in the oven while your finish preparing the dish.
  4. Add the sun dried tomatoes and artichokes to the same pan the shrimp were in.
  5. Sauté a minute or so.
  6. Next, add the spinach.  It may seem like alot, but it will cook down.
  7. I add a sprinkle of Kosher salt over the spinach.
  8. Allow the spinach to cook down, stirring occasionally.
  9. Once spinach has wilted, taste and add salt and pepper accordingly.
  10. At this step, I would start cooking my pasta.
  11. Next, add in 1/2 cup white wine to the spinach, artichoke, and sun dried tomato mixture.
  12. Simmer until the wine has been reduced by half.
  13. Then, add in the minced garlic and simmer another few minutes.
  14. Taste again to check spices.
  15. Pour in the cream and allow to simmer on low for a minute of so.
  16. While your pasta is finishing up, the spinach mixture will thicken.  Add 1/2 cup of pasta water to the mixture.
  17. Remove the shrimp from the oven.
  18. Place the cooked pasta in a bowl, top with the spinach artichoke, and sun dried tomatoes, and then the shrimp.
  19. Top with freshly grated parmesan.
  20. Enjoy!

Notes

  • If you can only find sun dried tomatoes in oil, use the oil to sauté the shrimp.  Then rinse the sun dried tomatoes and allow to dry before using.
  • You may need to add some additional butter to your skillet if using oil from sun dried tomatoes.
