I smoke the cheddar cheese first using my cold plate and my Smokin’ Tex Smoker.

Then I add in some sun dried tomatoes and a mix of olives.

After I mix it all together, I pour over my homemade dressing and give it a chill in the fridge.

I store the olive and cheese mixture upside down in wide mouth quart size mason jars and simply pour the appetizer into a shallow dish when it’s ready to serve.

Ingredients

Scale
  • 2 – 4 ounce blocks of artisan yellow and white cheddar, smoked
  • 1  8.5 ounce jar sun dried tomato halves
  • 3/4 pound Spicy Greek Garden medley (I find this combo in my grocery store deli)
  • 1/2 cup white wine vinegar
  • 1/4 cup olive oil
  • 3 wide mouth quart size jars with lids.

Instructions

  1. Cube the cheese into small blocks about 1/4 square.
  2. Place the cheese in a bowl.
  3. In a jar, drain the juice of the Spicy Greek Garden Medley (this is a mix of marinated olives, carrots, cauliflower, etc)
  4. In that same jar, drain the oil from the sun dried tomatoes.
  5. Coarsely chop the Spicy Greek Garden Medley and add to the bowl of cubed cheese.
  6. Then, do the same with the sun dried tomato halves and place in the bowl with the cheese.
  7. To the jar with the oil and juice, add 1/2 cup white wine vinegar.
  8. Then add 1/2 cup olive oil.
  9. Put the lid on and give it a good shake.
  10. Divide the cheese mixture equally between 2 quart size jars.  It is much easier to spoon the cheese mixture into the jars if you use wide mouth jars.
  11. Pour the dressing equally between the two jars of cheese.
  12. Put the lid on the jars, turn upside down, and chill in the refrigerator at least 8 hours, preferably overnight.
  13. Pour the cheese and olive mixture into a bowl and serve with crackers.
