  • 2 Tablespoons butter
  • 1 white onion, chopped
  • 6 slices bacon, lightly cooked and still pink (not all the way cooked)
  • 1 bell pepper, chopped
  • 1/2 jalapeno, chopped
  • 2 cloves garlic, minced
  • 1 pound pinto beans, washed
  • 6 cups chicken broth
  • 1/4 cup purple onion, chopped
  • 1 Tablespoon Chicken Bouillion
  • 1 teaspoon granulated garlic
  • 1 teaspoon granulated onion
  • 1 teaspoon chili powder


  1. I cook my bacon in the oven, I don’t like to cook it in the instapot, but you can.
  2. Add the oil from the bacon to the Instapot, add 1 Tablespoon butter, and turn the Instapot to saute.
  3. Saute white onion, bell pepper, and jalapeño until tender in the oil and butter.
  4. Add garlic and saute another 30 seconds.
  5. Turn off Instapot and add chopped bacon, beans, purple onion, and chicken broth.
  6. Stir and add the remaining spices, including chicken bouillon.
  7. Put lid on Instapot, making sure the vent switch is closed.
  8. Turn Instapot to Manual High for 95 minutes.
  9. Allow the Instapot to completely release pressure naturally (about 1 hour) before removing lid.  This is part of the cooking time.
