J Dub’s Fudge Brownies


Ingredients

  • 4 teaspoons espresso powder
  • 1 1/2 cups flour (188 grams)
  • 2 1/4 cup sugar (452 grams)
  • 2 sticks butter (227 grams), cut into chunks
  • 1 teaspoon baking powder
  • 4 eggs
  • 2 egg yolks
  • 4  cups semi-sweet chocolate chips divided
  • 2 tablespoons vanilla
  • 1 1/4 cups (106 grams) Dutch process cocoa ( I use Rodelle)

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.  Line a 12.5” x 17.3” X 1” cookie sheet with parchment paper.  Spray with Baking with Flour to prevent brownies from sticking.
  2. Using a double boiler, melt butter and 3 cups of semi sweet chocolate chips together. You may use a large heat proof bowl placed over a saucepan of simmering water to achieve the same goal if you do not have a double boiler.
  3. Whisk in sugar.
  4. Allow chocolate mixture to cool slightly.
  5. While chocolate mixture is cooling, whisk together flour, cocoa, and baking powder.
  6. Set the flour mixture to the side.
  7. Add each of the four eggs 1 at a time whisking for a full minute after adding each one.
  8. Add the two yolks and whisk for another full minute.
  9. Pour chocolate mixture into flour mixture and stir until combined.
  10. Add vanilla and remaining chocolate chips.
  11. Mix again.
  12. Pour brownie batter onto greased parchment covered cookie sheet.
  13. Bake the brownie batter for approximately 18-20 minutes until center is done and toothpick comes out clean.
  14. Allow the brownies to cool on cookie sheet for at least 45 minutes.
  15. Use parchment paper to remove brownies and cut into 1” squares

Notes

  1. For Valentines brownies, after the brownies have baked for a 2 minutes, remove them from the oven and dust with your favorite sprinkles.
  2. After brownies have cooled, you can also cut heart shaped brownies out using a metal cookie cutter.
