J Dub's French Onion Soup - J Dub By Design™

French Onion Soup

My French Onion Soup is Heaven in a bowl.

  • 6 yellow onions, sliced into 1/4 inch rounds
  • 4 Tablespoons butter melted
  • 1/4 cup white wine ( I use Pinot Grigio)
  • 3 garlic cloves, minced
  • 32 ounces chicken stock
  • 2 Tablespoons chicken flavor base
  • 1 Tablespoon Worcestershire
  • Swiss cheese, sliced
  • Gruyere cheese, grated

  • 1/2 loaf French Bread
  • 1/4 cup butter
  • 1 Tablespoon granulated garlic
  • 1 teaspoon dried basil
  • 2 teaspoons course ground black pepper

  1. Saute the onions in the melted butter until caramelized, it usually takes around 45 minutes for me using my Dutch oven.
  2.  Once onions are caramelized, deglaze the bottom of the pot by pouring in the white wine in and stirring to remove the flavorful bits from the bottom of the pot.
  3. Once you have deglazed the pot, add minced garlic, and saute for another minute.
  4. Add chicken stock.
  5. Add worcestershire and 2 Tablespoons chicken flavor base.
  6. Stir and simmer on low for 20 minutes.

  1. Cut bread into large cubes and place in bowl.
  2. Melt butter and add spices.
  3. Pour butter mixture over bread cubes.
  4. Bake in the oven at 400 degrees Fahrenheit for about 7 minutes until crispy and golden.

Putting It All Together

  1. Ladle soup into bowls.
  2. Place croutons on top of soup.
  3. Add a slice of swiss cheese and sprinkle Gruyere over croutons.
  4. Place oven safe bowls under broiler for a few minutes to melt and brown cheese.
  5. Watch closely
