J Dub’s Feta and Olive Vinaigrette is such a tangy, mouth watering treat. Using roasted garlic infused olive oil takes it up a notch. And, the tomato basil feta makes it PERFECTION.
To get your hands on some roasted garlic infused olive oil, just roast some garlic in the oven. Here’s a link to my Instagram IGTV where I show you how I roast garlic. Just add an extra amount of olive oil over the garlic you are roasting. Then strain the roasted garlic to get your infused oil. VOILÁ!
1/4 cup garlic infused olive oil (feel free to substitute regular olive oil)
3 heaping T tomato and basil feta (I use Athenos)
15 kalamata olives, chopped
2 cloves roasted garlic
1/2 cup Red wine vinegar
2 Tablespoons Balsamic Vinegar
- Mix it all you ingredients together.
- Pour dressing into container using a kitchen funnel.
- Chill for at least 4 hours, preferably overnight so that the flavors have time to meld together.
