J Dub’s Apple Roses

Description

This dessert will have your guests mesmerized.  The best part – they are so easy to make.


Ingredients

  • 23 Honeycrisp apples
  • 1/4 cup apple jelly
  • 1/4 cup apricot preserves
  • 1 T vanilla
  • 2 T butter
  • 4 T sugar
  • Juice of one lemon
  • 1 box puff pastry
  • homemade cinnamon sugar (I use a ratio of 2 to 1 sugar to cinnamon)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Unbox your puff pastry sheets and allow to thaw on the counter.  It takes about 30 minutes.
  3. Using a mandolin, slice your apples as thin as possible.
  4. Sprinkle sugar all over the apples.
  5. Place the apples in a microwave safe bowl and heat for 3 minutes.
  6. Squeeze the juice of one lemon on the apples and allow them to cool.
  7. Add 1/4 cup apricot preserves, 1/4 cup apple jelly, 2 T butter, 1 T vanilla to a sauce pan.
  8. Turn the heat on low and heat until butter has melted.  Set the filling mixture to the side.
  9. Open up one puff pastry sheet.
  10. Using a rolling pin, roll the dough out to to be about 12-14 inches long.
  11. Cut the dough into 3 strips using the seams in the dough as a guide.
  12. Place your apple slices with skin side facing out down the long side of a puff pastry strip.
  13. You want the apples to peak over the dough approximately 1/4 inch.
  14. Layer the slices all the way down the strip.
  15. Using a pastry brush, generously baste the dough that does not have apples on it with the filling.
  16. Sprinkle the apples with cinnamon sugar.
  17. Roll the apples over from one end to the other to form a rose.
  18. Repeat with the remaining strips and the second piece of puff pastry.
  19. Place the roses in a muffin tin, sprinkle them with more cinnamon sugar, and baste some more of the filling on top of them.
  20. Bake them for 40 minutes.
  21. Once you remove them from the oven, you can baste them with the filling again.

Notes

  1. Serve these with a scoop of Bluebell Ice Cream and drizzle more filling over the ice cream.
  2. Store any remaining roses in the refrigerator for up to 3 days.
