You will also need a candy thermometer.

Now, don’t let that be a turn off.

This is not complicated.

The thermometer is the only way you will know the toffee is at the stage where it hardens completely.

And, you are going to love incorporated these homemade toffee bits in your holiday desserts starting with my Miniature Toffee and Toasted Pecan Pound Cakes.

Ingredients

Scale
  • 2 sticks (227 grams) butter
  • 2 cups light brown sugar
  • 1/2 teaspoon Kosher salt

Instructions

  1. Line baking sheet with parchment paper.  Make sure to do this first, because when the toffee gets to the right temperature, you will not have time to do this before it starts to harden.
  2. Melt butter in heavy duty sauce pan.
  3. Add sugar and salt to butter and whisk constantly for 1 minute until combined.
  4. Stir constantly for approximately 10 minutes until mixture resembles peanut butter and reaches a temperature of 295 -305 degrees Fahrenheit.  You will need a candy thermometer to check the temperature otherwise the candy won’t harden or you will end up scorching it.
  5. Pour the hot toffee into prepared pan and let harden.  This will take a few hours.  After the toffee cools, you can place it in the refrigerator to speed up the hardening process.
  6. Then, place the toffee in a ziplock bag and use a rolling pin to crush.
  7. Store in air tight container in the refrigerator for up to two weeks.
