My Holiday Pound Cake with Caramel Icing is a recipe I have been tweaking for years.
Ever since I first tasted a Slaton Vanilla Wafer, I knew that those cookies could be so much more than foundation for a fabulous banana pudding.
And, this cake is the BOMB!
I use the wafers in place of flour and load this cake with pecans and pumpkin.
Then give you a surprise cream cheese filling.
But wait, there’s more.
I top it with the most delicious buttery caramel old fashioned icing.
You will be the hit of the holiday dessert table.

Holiday Pound Cake with Caramel Icing
- Total Time: 1 hour 30 minutes
- Yield: 1 cake 1x
Description
This dessert will be the rockstar of all your holiday get-togethers.
Ingredients
Cake Ingredients
- 4 cups crushed vanilla wafers (455 grams) ( Slaton’s)
- 1 cup chopped toasted walnuts or pecans (114 grams)
- 1 cup milk (227 grams)
- 2 cups sugar (396 grams)
- 1 16 ounce can pumpkin (454 grams)
- 1 cup butter (226 grams)
- 6 eggs
- 1 teaspoon baking powder (4 grams)
- 2 teaspoons cinnamon
- 1 teaspoon pumpkin pie spice
- 1 tablespoon pure vanilla
Filling
- 8 ounces cream cheese
- 1/3 cup (66 grams) sugar
- 2 teaspoons vanilla
- 1 egg
- 1/2 teaspoon pumpkin pie spice
Caramel Icing
- 1/2 cup (113 grams) butter
- 1 cup (213 grams) brown sugar
- 1/3 cup (76 grams) milk
- 2 cups (224 grams) powdered sugar
- 1 Tablespoon vanilla
Instructions
- Preheat oven to 350 degrees Fahrenheit.
- Grease and flour a bundt pan.
- Using a stand mixer, cream butter and sugar together.
- Add in the pumpkin and mix again.
- Add each egg individually, beating only until combined.
- Mix crushed vanilla wafers, baking powder, cinnamon, and pumpkin pie spice.
- With the mixer running, add wafers and then milk in increments until combined.
- Add vanilla and nuts and mix again.
- Set to the side.
Instructions for Filling
- Using a hand mixer or a fork, mix cream cheese and sugar together.
- Add in the egg, vanilla, and pumpkin pie spice.
- Mix again.
Putting It together
- Pour half of the cake batter into the greased bundt pan.
- Spread the filling over the cake batter evenly.
- Pour the remaining cake batter over the filling.
- Drop the pan gently on the counter to get rid of any air bubbles.
- Bake in the oven until toothpick comes out clean, approximately 1 hour. Start checking at 55 minutes.
Instructions for Icing
- Melt the butter and brown sugar in a small saucepan.
- Add milk.
- Bring to a boil and allow to boil for two minutes making sure to stir periodically.
- Add in powdered sugar and vanilla.
- Whisk until smooth.
- Allow to sit in pan off heat for a few minutes until it thickens.
- Then, pour the icing over the cake.d
- Prep Time: 30 minutes
- Cook Time: 1 hour
