I absolutely adore Cold Smoked Cheddar Cheese.
I love all cheese, but smoked cheese is by far, my most favorite.
When I was a young girl, around the holidays, a friend of Daddy’s always brought us a fried turkey and huge gift basket full of cheese and crackers.
That is where I discovered my love of smoked cheese.

I could care less about the turkey……give me that basket of cheese.
I thought Hickory Farms Smoked Gouda was the best thing I had ever tasted.
Then I bought David a smoker for our anniversary.
The smoker is from Smokin’ Tex.
Now, I use that smoker more than he does.
Move over Hickory Farms, there’s a new smoker in town.
For this cheese, I use the Smoking Tex cold smoke plate.
This allows you to smoke the cheese any time of year without it getting too soft or melting on you.
The end result is smoked cheese perfection.

This smoked sharp cheddar is outstanding. Use it in your baked potatoes, as an appetizer, or just by itself as a snack. So so so good.

Ingredients
- 4 blocks of cheddar cheese (I use the 4 ounce blocks of both yellow and white artisan cheddar from my grocery cheese department.)
- ice
- 2 metal pans
- a few pieces of hickory wood.
Instructions
- Fill a metal pan with ice.
- Place the Smokin’ Tex thermal barrier (cold smoke plate) on the bottom rack.
- Place the metal pan with ice on the barrier.
- Next, unwrap the cheese and place them bricks in the second metal pan, spacing them so they are not touching.
- Put the cheese on the top rack of the smoker.
- Place the hickory in the wood box.
- Latch the door of the smoker.
- Set the thermostat to 150 degrees and smoke for 15 minutes.
- Turn the smoker off and leave the cheese in the smoker for an additional 60 minutes.
- Remove the cheese from the smoker and place in the refrigerator to chill until ready to serve.
I use this cold smoked cheddar cheese in my Stuffed Hasselback Potatoes.
I also cube the artisan cheddar up and marinate it with some olives. That recipe is beyond divine. Click here for my Marinated Cheese Recipe.
Did you know, you can also smoke cream cheese? My Smoked Cream Cheese with Charred Olives is an unbeatable appetizer.
